I really like vegan cookies. I especially like vegan cookies that are 99% chocolate chip and 1% cookie dough. When I first started working my way towards a healthier, fitter lifestyle all those years ago, I know that vegan cookies were going to have to stay. Fortunately, it seems like every other blogger, cookbook author and chef in the world feels like that, because there’s a huge array of all-vegan cookie recipes out there, all focusing on nutritious ingredients and a ‘real food’ approach.
I’m glad that this is the case, because ever since Isla arrived in our family, I’ve found cookies in the various incarnations to be hugely comforting. When she was tiny, I would make really nutrient-dense, oat-based ‘lactation cookies’ that I could nibble during the 76530 hours a day I spent breastfeeding. Now that she’s getting older, they’re a really toddler-friendly baking project. The dough is usually resilient enough to handle being mixed to oblivion, and cutting shapes and plopping them on trays is every small child’s idea of heaven. And, of course, there’s nothing quite like pulling a tray of fresh vegan cookies out of the oven and making the whole house smell of vanilla!
