Sunny Days & Croissant Fails

Remember when I review the 100 Best Vegan Baking Recipes book? And said that it was a pretty good book? Well. I made the pain au chocolate recipe last weekend and it was a complete fail. I guess I’ll be sticking with ready-made puff pastry in the future, as this yeasted version just did not turn out at all. I also made some breakfast ice-cream, which is super simple to prepare. I’ll share the recipe on the blog soon.
Because the weather was absolutely gorgeous, we decided to take a walk along Otterspool promenade, treating ourselves to ice lollies and spending a few hours in absolutely gorgeous sunshine. I’m glad we did, as the weather this week is a lot less glorious…
There were so many people out and about, including quite few flying their kites!

I really enjoyed spending time together and not having to worry about anything. We have so much going on at the moment that it’s really become a rare occasion. We’re off to Germany to visit my family next week though, so that means another 6 days of stresslessness (hehe) and fun to look forward to!

  1. I think making croissants can always be a pain in the a. I made them once or twice but also had to throw out quite a bit of dough. This recipe looks very good:
