Christmas | Cookie Party & a Vegan Royal Icing Recipe

  

This year, I finally went through with something I’ve always wanted to do: I hosted a cookie party! I kept seeing these all over the internet for years, and while they seemed like bundles of fun, I never really had the time or the friends to host one myself. This year, I had both of those, so I took the plunge and hosted my first real party on my own!


    
   It was bundles of fun, I prepared the dough and a tonne of royal icing and off we went! This time, I tried veganising a standard icing recipe rather than using one from the Vegan Meringue group, and it worked beautifully! Aquafaba really is a brilliantly versatile and forgiving ingredient. I’ve shared the recipe I used below, if you’re still looking for one.

Ingredients
  1. 500g icing sugar
  2. 6 tbsp aquafaba
  3. 1 tsp vanilla
  4. 1 tsp lemon juicd
Instructions
  1. Beat all ingredients until smooth and light in colour.
