Baked Apple Porridge

Baked Apple PorridgeAs is so often the case, I’m a little bit reluctant to call this a ‘recipe’. It’s a very simple thing to come up with. But the end result was so good I thought it was very much worth sharing!In Germany, we often have Bratäpfel during the winter. They’re cored apples, stuffed with marzipan, nuts & raisins, baked & served with a mouthwatering vanilla sauce. Since baking a single apple for myself (fiancé doesn’t like them) seemed like a ridiculous thing to do, I decided to channel my energy into a slightly more healthy porridge-version. Baked Apple Porridge

Serves 1

You will need:

3 tablespoons vegan instant oat cereal (such as readybrek)
1 tablespoon ground almonds
200ml almond milk
1 teaspoon vanilla extract
1 small apple, in bite-sized pieces
walnuts
agave nectar
cinnamon

Mix the cereal, almonds, milk & vanilla in a breakfast bowl. Scatter the apple on top and microwave for 1-2 minutes on high, until the apple is tender. This could also be done in a saucepan on the hob if you prefer not to have radioactive porridge, of course! Toss some walnuts on top, drizzle with agave and sprinkle with cinnamon. Enjoy.
