5 Great Pumpkin Recipes

I know, I know. Part of the reasoning to move Vegan MoFo into September this year was to avoid the flood of pumpkin recipes it always generates. But you know what? I LOVE pumpkins. Pumpkins are the main reason I think Autumn is great. I spend all year waiting for them to come into season and get incredibly excited when they do. They’re so delicious and so unbelievably versatile, or can you name many other plants that are equally at home in pasta, soup, hot beverages and baked goods? That’s what I thought. I’m compiling some of my favourite pumpkin recipes here, in the hopes that you own the same books that I do and will try some of them yourself!5. Pumpkin Puree.

A link to one of my own recipes, but I think this is a rather important one since pumpkin puree forms the base of many pumpkin recipes. When I moved away from home, I had no idea how to make a pumpkin into useable pumpkin puree, so I had to ring my mum for help. Here’s my handy little guide to get you started off.

2. Pumpkin Spice Latte

Everyone and their Gran is running to Starbucks to get these, but vegans are excluded because of the milk included in the syrup used for the iconic Autumn drink. However, A Beautiful Mess have posted a recipe for Pumpkin Spice Latte Syrup, so I’m determined to make my own this year!

1. Pumpkin Soup

I adore pumpkin soup. In fact, I think it’s the best way to have pumpkin. I use the BBC recipe and substitute the double cream with soya cream. Happy Autumn.
